Lavender Cookies

Summer has finally landed and my garden is bursting with the heady smell of lavender much to my girls delight.

I’ve been experimenting with using Lavender in my baking for a few years now and these simple lavender cookies are a firm favourite with everyone. My girls have already put an order in for their end of year class parties!

Ingredients

8oz /225g Butter
6oz/175g Caster Sugar
1 egg ( I found it worked fine with a medium or large egg)
9oz /250g Plain Flour
2 tsp Baking Powder
1 tbsp Dried Lavender or 2-3 tbsp Fresh Lavender (adjust quantities depending on how strong you want the lavender taste. Too much lavender will leave a bitter taste)
 
Oven temp approx 180ºC/Gas 5 (Adjust depending on oven. My fan oven always needs dropping by about 30ºC)
 
I’ve also made the cookies using ‘Lavender Sugar’. I did a 100% substitute and used 6oz of lavender sugar which was perfect but you may need less depending on how strong you like the taste to be and how strong you make your lavender sugar).
 
1. Mix together the butter and sugar until light and fluffy.
2. Add the egg and mix in
3. Sift in the flour, baking powder.
4. Add the lavender and mix well
The final mixture will be a sticky dough.
Place large teaspoons of the mixture on a baking sheet and flatten slightly (allow room for spread). Bake for 5-10 minutes. They cookies will sink slightly once out of the oven and will be very soft. I leave them for a few seconds before transferring them to a wire rack to cool as they are less likely to break.

Lavender cookies are perfect for Afternoon Tea on a hot summers day with a cup of Earl Grey.
