This chicken vegetable rice recipe has been a lifesaver for our family during hectic days filled with after-school sports and activities. It’s a nutritious and fun solution for “car supper picnics” when there’s no time for a sit-down meal at home. The kids love the creative presentation, and I love knowing they’re eating well on the go.
What Are Car Supper Picnics?
Car supper picnics are a fun, practical way to feed your family on the move. These meals are perfect for those evenings packed with swimming lessons, dance classes, or soccer practice. Not only do they keep the kids nourished and happy, but they also add an element of excitement with creative touches like serving dishes in jam jars. It’s a simple way to turn a busy evening into a memorable experience—a picnic in the car!

Why We Love Chicken Vegetable Rice for Picnics
Rice dishes are a fantastic option for meals away from home. They are delicious warm or cold, making them perfect for packed lunches, picnics, and particularly our weekly car suppers.
One of our favorite ways to serve this dish is in saved jam jars. It’s practical and adds a fun, rustic charm to the meal. Jam jars make the rice look appealing and are easy to transport—plus, kids love eating from them! Our Car Supper Picnic Spread
For this week’s car supper picnic, we packed:
- Chicken Vegetable Rice
- Mini Corn Cobs
- Fine Green Beans
- Cherries
- Bananas
- A Jordans Frusli Bar
- Milk Chocolate Cookie
- Water

The chicken vegetable rice was the star of the show, served in pretty jam jars with cute plastic sundae spoons. The jars not only looked delightful but also made it easy for the kids to eat in the car without spills. Loose fruits and vegetables were packed in their drinking cups, while cookies were wrapped in greaseproof paper—doubling as makeshift plates when unwrapped. The kids loved the variety and presentation, which turned a rushed meal into something they looked forward to.

The Recipe: Chicken Vegetable Rice
Ingredients:
- 2 cups of brown easy-cook rice
- Splash of olive oil
- 1-2 large cloves of garlic, finely chopped
- 1 heaped tsp ground ginger
- 1 heaped tsp ground turmeric
- 1 level tsp ground fenugreek
- 1-2 large skinless chicken breasts, cubed
- 1 medium Spanish onion, finely chopped
- 2 medium carrots, finely chopped
- Frozen peas (adjust for even distribution)
Instructions:
- Cook the Rice: Start by cooking the rice according to package instructions.
- Prepare the Spice Mix: Heat a splash of olive oil in a large pan over medium heat. Add the garlic and sauté for a couple of minutes. Stir in the ginger, turmeric, and fenugreek, blending them into the oil.
- Cook the Chicken: Add the cubed chicken to the pan, cooking for 5-10 minutes until the edges are sealed.
- Add the Vegetables: Stir in the onions and cook until translucent. Add the carrots and continue to sauté until the onions are fully cooked.
- Combine the Ingredients: Mix in the cooked rice, stirring until it takes on a golden hue. If the mixture feels dry, add a splash of water to loosen it.
- Finish with Peas: Turn off the heat and stir in the frozen peas. The residual heat will thaw the peas, keeping them fresh and crisp.

Wow, this looks fab! Not that I let mine eat in my car LOL but definitely dishes they’d love.
Love the idea of jam jar containers for outdoors eating. Although I always end up with lots of jars but no lids
