Sausage Salad Pitta Pockets (meat, vegetarian or vegan)

Recently, I was extolling the virtues of Sausage Salad Pitta Pockets to a friend. Their convenience makes them one of my top choices for a lazy day meal. They take about 15 minutes to prepare and are perfect for those hectic school days, quick playdate snacks, or when you’re running low on groceries and need to use up leftovers. You can even wrap them in clingfilm or foil and take them on a picnic!

Why Pitta Bread Should Be A Food Staple For Everyone

Pitta bread is a truly versatile food staple that deserves a permanent spot in your freezer. It only takes a minute or two to defrost or warm up in the toaster, making it a quick fix for many meals. Whether you’re spreading it with butter, slicing it into fingers for dipping into egg or soup, or stuffing it with a delicious filling, pitta bread is endlessly adaptable and always tasty.

Get The Kids Involved

Making Sausage Salad Pitta Pockets is a fun activity for the whole family. Older kids can practice their knife skills by chopping ingredients into bite-sized pieces, while younger children can enjoy mixing the salad or stuffing the pitta pockets.

Ingredient Needed Sausage Salad Pitta Pockets

  • 1/2 Cucumber,
  • 10-12 cherry tomatoes (or similar
  • 6x herby sausages (vegan, vegetarian, or meat),
  • mayonnaise (vegan or egg based)
  • 3x pitta bread (brown or white).
  • chopping board
  • sharp knife
  • bowl
Ingredients To Make Sausage Salad Pitta Pockets

Step-by-Step Guide to Making Sausage Salad Pitta Pockets

1. Cook the Sausages: Fry or bake your sausages until they are beautifully golden. Opt for a flavorful, herby sausage like Lincolnshire-style, which works well for both meat and veggie versions.

2. Prepare the Vegetables: While the sausages are cooking, chop the cucumber and tomatoes into small, bite-sized pieces.

3. Chop the Sausages: Once the sausages are cooked and cooled, chop them into pieces similar in size to the cucumber and tomatoes.

4. Mix the Salad: In a bowl, combine the chopped cucumber, tomatoes, and sausages with a dollop of mayonnaise. Mix until everything is well-coated.

How to Prepare the Pitta Pockets

1. Warm the Pitta Bread: Heat your pitta bread under the grill or in a toaster. We prefer ours slightly crunchy on the outside, though you can keep them softer if you prefer.

2. Slice and Open the Pitta: While the pitta is still warm, cut each one in half and gently open it up, being careful of the hot steam inside. You may need a knife to help with this step.

3. Optional Butter Spread: If you like, spread a little butter inside the warm pitta bread, letting it melt into the bread for added flavor.

4. Fill the Pitta Pockets: Stuff each pitta pocket with the sausage and salad mixture. Serve immediately and enjoy!

Sausage Salad Pitta Pockets are not only quick and easy to make, but they also bring a delicious, hearty twist to your meal routine. They are perfect for busy days, family gatherings, or just when you crave something simple yet satisfying. Enjoy!

that’s the kind of tea we love….recently I’ve found that the pitta breads I get fall apart though so we’ve moved on to wraps…fish finger wraps, falafel wraps, spicy beanburger wraps…yum. Haven’t tried sausage yet though…that will be next!x

I tried making this recipe with my 5-year old and he really enjoyed filling up the pockets. He knew he couldn’t use the knife so he watched as I did the job. I just let him fill the pockets as I cooked and he said that he’d love to do this again. Well, this is a great dish since it has both meat and veggies that can balance our nutritional needs. 🙂
