If you’re looking for an impressive yet delicious cake for a special occasion, this White Chocolate Forest Fruits Ganache Drip Cake is perfect. It’s visually stunning and features layers of soft sponge, berry jam, and smooth white chocolate ganache.
I created this cake for my eldest’s birthday party, which had a ‘Go Ape’ forest theme. The cake not only needed to look the part but also survive a 30-minute car ride and a short trek through the woods. If you’re unfamiliar, Go Ape is a fun, hour-long tree-top adventure course set in beautiful forests designed for kids.
Why a Forest Fruits Ganache Drip Cake?
To match the forest theme, I chose to make a Forest Fruits Drip Cake that combines the freshness of berries with the richness of white chocolate. Below, Iโll walk you through the steps to create this impressive dessert. Although I didnโt manage to take step-by-step photosโmaking cakes the night before a party can be hecticโthese instructions will guide you through the process.

How To Make a Forest Fruits Drip Cake
You’ll need to prepare two batches of Victoria Sponge, which will yield five cake layers. I recommend mixing and baking the batches separately, rather than making one big cake batter mix, because it seems to create a lighter, airier cake. 1 batch of White Chocolate Ganache and 1 batch or red chocolate ganache
Victoria Sponge Recipe
Victoria Sponge Ingredients:
- 8 oz (225g) butter
- 8 oz (225g) caster sugar
- 4 medium eggs
- 2 tsp vanilla essence
- 8 oz (225g) self-raising flour
Victoria Sponge Instructions:
- Preheat your oven to 150ยฐC (Gas Mark 4).
- Cream the butter and sugar together until light and fluffy.
- Add the eggs and vanilla essence, mixing well.
- Fold in the self-raising flour. For best results, sift the flour before adding, though this step is optional and I often miss this step out (especially when in a hurry!).
- Divide the mixture evenly into sandwich cake tins and bake for approximately 20 minutes or until the cakes turn golden brown.
- Once baked, turn the cakes out onto a wire rack to cool. Flip them upside down for a flatter surface.
- Level each layer using a cake wire or knife, stack them, and place in the fridge to chill.

White Chocolate Drip Cake Ganache Recipe
I use a 3:1 ratio of white chocolate to whipping cream for a thick, spreadable consistency.
White Chocolate Ganache Ingredients:
- 600g high-quality white chocolate (I used Tesco Finest)
- 200ml whipping cream
White Chocolate Ganache Instructions:
- Gently heat the whipping cream (either in the microwave on top of your stove) until just below boiling. Remove from heat and stir in the broken-up white chocolate until melted and smooth.
- Let the ganache cool to a buttercream-like consistency.

Assembling the Cake:
- Remove the chilled cake layers from the fridge.
- Sandwich the cake layers together using alternate layers of your favorite berry jam and white ganache between each cake layer.
- Once stacked, cover the entire cake with a thin layer of ganache to seal in moisture and crumbs, then chill.
- After chilling, apply a second coat of white chocolate ganache, ensuring the surface is smooth for the drip effect. Don’t make this too thick.
Put in fridge to chill as you want the cake to be very cool when you pour the drip ganache over it.

Red Drip Cake Ganache Recipe
For a vibrant drip, use a 1:1 ratio of chocolate to cream and add a gel-based red food coloring.
Red Drip Cake Ganache Ingredients:
- 100g white chocolate
- 100ml whipping cream
- Red gel food coloring (avoid liquid food coloring)
Red Drip Cake Ganache Instructions:
- Heat the cream just before boiling, then remove from heat and stir in the chocolate.
- Mix in the red food coloring until you reach your desired shade.
- Let the ganache cool before using.
Adding the Drip Effect
- Once the cake is thoroughly chilled, gently pour the red drip ganache onto the center of the cake.
- Use the back of a spoon to spread it toward the edges, allowing it to drip down the sides.
Drip Cake Finishing Touches
- Pile a variety of fresh forest fruits (such as raspberries, blueberries, and blackberries) on top, using any leftover ganache to help secure the fruit in place.
- Lightly dust the fruits with icing sugar for an elegant finish.
And there you have itโan eye-catching Forest Fruits Ganache Drip Cake thatโs perfect for any celebration!
