Ingredients for Healthy Halloween Peppers (Brain Monsters)

To make your very own Pepper Brain Monsters, you’ll need the following ingredients:

  • Red, orange, or yellow peppers (choose large, sturdy, square ones that will stand up on a plate)
  • Bolognese sauce (try our delicious vegetarian recipe using Quorn)
  • Spaghetti or linguine

Additional Tools:

  • Sharp kitchen knife
  • Spoon
  • Plate

Top Tip: Many kids (and even adults) aren’t fans of cooked peppers, so the secret to this dish is serving the peppers raw. Use sweet red, orange, or yellow peppers for the best flavor.

Step-by-Step Guide to Make Stuffed Halloween Peppers

  1. Prepare the Peppers: Start by slicing the tops off your peppers and carefully removing all seeds and the stalk.

  1. Carve the Face: Use a sharp knife to carve spooky eyes and a mouth into the side of the pepper, just like carving a pumpkin.

  1. Create the Brain Monster Effect: Take cooked spaghetti or linguine and drape the ends inside the pepper, letting the rest hang over the outside to resemble wild hair. Avoid stuffing the pasta entirely into the pepper, as you’ll want to leave room for the bolognese sauce. But do take the ‘pasta hair’ all around the back of the pepper as well.

  1. Fill with Bolognese Sauce: Spoon the sauce into the pepper, piling it up to resemble a brain spilling out of the top. As you fill it, the sauce will ooze through the eyes and mouth, giving the Pepper Brain Monster a creepy, ghoulish look!
