When my daughter Ro requested a Waterfall Birthday Cake for her party a few years back, I must admit, I inwardly groaned. Initially, she had her heart set on a swimming pool cake to match her pool party theme — complete with a large curly slide! Thankfully, I managed to steer her gently away from the slide idea!
As Ro brainstormed with her sisters and explored swimming pool cakes on Google, the theme evolved. And amid the giggles and excited chatter, the concept of a waterfall cake emerged. And so, with only 24 hours, a creative spark, and a lot of determination, I set to work.

Each delicious cake creation combines beauty and flavour, making them perfect for special occasions!
Materials and Ingredients:
- Two 18″ vanilla sponge cakes
- Hedgerow jam
- Six mini round sponges (I used a fantastic cake tray from Lakeland for these)
- A large 20″ square sponge base
- Large silver Square cake board
- Pre-made vanilla and chocolate buttercream (I used Betty Crocker’s, which was surprisingly delicious!)
- Blue food colouring
- Pre-made icing flowers
- A Playmobil palm tree for decoration
How To Make A Waterfall Birthday Cake
Here’s how I brought the idea to life:
Step 1: Bake and Assemble the Cake
- Prepare the Layers: I baked two 18” vanilla sponge cakes and stacked them with a generous layer of hedgerow jam in between. This became the main structure of the waterfall.
- Mini Cakes for Height: Using my mini round sponge tray, I baked six small mini sponges and arranged them around the top edge of the main cake to create a stepped effect. This added dimension and height to the design.

- Position the 20″ Base: Finally, I baked a large 20” square sponge base and carefully placed the other cake layers carefully on one corner of a large 20”.
Hedgerow jam cement: Each cake layer had a layer of hedgerow jam between them.

Step 2: Decorate the Cake
- Colour the Icing: I mixed a few drops of blue food colouring into the vanilla buttercream to create a beautiful aqua-blue shade for the waterfall. The chocolate buttercream served as the rocky mountains surrounding the waterfall.
- Add Details: I kept back a little of the vanilla icing, to add white water details to enhance the “flow” of the waterfall.
- Floral Accents: I placed store-bought icing flowers strategically along the “mountain” for a natural, decorative touch.
- Finishing Touch: A Playmobil palm tree at the top completed the scene, adding a playful and tropical vibe.

The Cake’s Reception
Despite my initial hesitation and a tight time frame, this cake turned out to be one of the easiest and quickest I’ve made. I even managed to tidy the kitchen and get to bed before midnight! The best part? The look of pure joy and amazement on Ro’s face the next morning made all the effort worthwhile.

This cake was a hit not just because of it looked amazing, but because it captured the fun and magic of Ro’s birthday theme.

Sometimes, it’s the simplest creations, made with love, that leave the biggest impressions.
And that of course is what birthdays are all all about!
